Hello,
Is the CAN bus to which car radios are connected somehow standardized, and is it always a low-speed 100 kbit fault-tolerant system, or are there differences between manufacturers?
I'm not talking about the data itself on the bus, but rather the pure hardware connection.

It's not only different from manufacturer to manufacturer, but the connection method can even vary within the same model.

So, it can also be high-speed, right? How do universal car radio manufacturers (like Kenwood, Alpine) do that? Do the buses differ in their transceivers?

Simply use a high-speed transceiver.
A high-speed transceiver can also operate at low speeds (I believe up to 83.3 kbaud). The reverse is not possible because low-speed transceivers typically only support a baud rate of up to 125 kbaud.
Especially since no vehicle manufacturer uses Lowspeed CAN anymore. With the introduction of OSEK or AUTOSAR, only high-speed networks are used.
